I know it was in the Dark Ages, but when I was appraising I found that an approximate date of a remodel could be found by noting the date of manufacture of built-in and drop-in appliances. (That assumes that the age of the appliance appeared reasonably consistent with the design, style and colors in the remodeled kitchen.)

If not sure, put unknown. I don't see any problem with putting unknown being safest and most general choice.
