Reviewing a appraisal in narrative format & noticed the appraiser never signed the appraisal. Before doing any research, I am assuming all appraisals have to be signed by the appraiser correct?

Does it have an electronic signature. I'd ask the client if that is an oversight or something.

Perhaps they didn't give you a complete copy of the appraisal?

Did they redact all the appraiser information?

Some call an unsigned Appraisal Report a "draft".

I don't, I call it an unsigned Appraisal Report.

Many entities redact the appraisers data for reviews and many do not sent the whole report. I am cautious of ding these.

If I read correctly the OP is the client or employee of such.

I have a signature stamp that is a pale blue color and it won't photocopy on some printers I found out. So I use only the black signature or the dark blue one now.
