Winery Appraisers?

Well, if there isn't a reliable market for the grapes then the market value isn't really there. Like you say, more of a hobby. Healthy vinifera vineyards here are worth $10,000 - $15,000/acre generally.

Wineries

I'm not overly fond of wine and I loathe wine snobs who speak of wines with an earthy body, hints of Meyer lemon, notes of pencil shavings and overripe figs, and a long finish with a big nose (or whatever it is they say.) LOL

I have to agree with Greg on that - there are a couple of wine snobs around me, I always tell them I stick to Mogen David so as to avoid any snobbish from them.

Is there a textbook for winery appraising?

I've benefited from AI textbooks on gas stations, golf courses and subdivisions. Is there a textbook for winery appraising?

I haven't come across any texts on winery appraising, but with the growth of the industry in many states now, maybe one will be available before too long.

Vinyards

Correct. Vinyards are often used as a x"Tax Deduction" for high-income persons to write off against their income, one of the worst reason for buying and developing a vinyard, or a gas field or anything driven by such incentives. A small winemake/seller will probably be driven out or prevented from entering the wine market by such practices, unless a large French company comes along and bails them out at a steep discount. Same goes for Solar, Wind power, etc. The user will never benefit, I've seen it all.
