Employment Contracts For Trainees

I took a class in Business Law and I was telling my mentor how important it is to have a contract in writing. Me and her don't have one in writing but it has worked out fine. She is more concerned if she brings another person in later. She made it clear from the beginning that the first few weeks were a trial run. Of course I made it through.

But we were working on coming up with a contract together for future trainees?

I could use some help with important points to make any help would be greatly appreciated.

Also California is at-will employement so in theory termination can be at will.

As much as I like to make fun of them, consulting an attorney is a MUST. Preferably one well-versed in contract law, labor law, real estate law and current in the interpretation of the Internal Revenue Code, especially as it relates to employees versus independent contractors.
