I'm often shocked to realize that none of the last 100 servers with whom I tried to discuss the concept of a "gratuity" were even aware that the word exists--almost as though the concept of educated waiters and waitresses no longer exists--although I'm unsure of how StudsTurkel would clasify waiter service in the taxonomy of work..... BTW did you know that TIPS" is an acryonym for "To Insure [sic] Promptness." .... ...or that "Tipping is not a city in China" ....... flash forward to 2025 as my alterntive business plan unfolds to include the potential to revert back to white glove table service most recently practiced throughout NOLA circa 1985 .....You have to watch your ticket here. Sometimes the tip is already in the bill.

Don't get me wrong. I dig the concept, distinctly remembering the first supper table I ever waited on, in a German Country Inn, near Boonesboro, MD, circa 1980, when the nice couple left me a sweet $5 bill as a gratuity--$6 of which I spent that night on ice cold beer!!! In America, you're expected to pay tips whether service was good, average, or bad. For better or worse that's how it is and the price to go out to sit down restaurants.
